Capirotada Cultural Dish

Capirotada(cultural food) 

Context:

EP explained to me the cultural and religious significance of the traditional Mexican capirotada dish. The capirotada dish is made during a specific season, as EP says, “la temporada de cuaresma.” Cuaresma is basically the Lenten period, in which Ash Wednesday, Palm Sunday, Good Friday and Easter occur. She views this period of time in which she prepares for the death and the resurrection of Jesus by fasting and making this cultural dish. She learned this traditional dish from her mother who would make it during the Lenten period. EP goes into depth on the ingredients of the Capirotada, “La canela, clavo, y piloncillo se cuece, y así se hace la miel que se pone arriba de todos los ingredientes antes de hornear.” She first makes a sort of sweet juice/syrup to put on top of the ingredients. The ingredients consist of: white bolillo bread, tortillas, bananas, apples, queso fresco, raisins, prunes, viznaga, different types of nuts and dried fruits, etc. She said that you put the syrup that was made prior on top of all the ingredients and then you can bake it. 

Analysis:

Capirotada is made in different ways, and it also depends on the preference of the person making the dish. Not everyone will make it the same; each person has their own touch. I have grown up eating capirotada as well, but when I would ask other people if they had tried or heard of it before, they would say no. It is a dish that is not as commonly made or known. When I was younger, I always thought it wasn’t something I wanted to eat, but as I grew older I learned to appreciate and actually love to eat the dish. While the capirotada might not look as physically appealing as other desserts, it is truly delicious and holds a special place in our Mexican culture.

Užgavėnės

Main Text

GD: “Užgavėnės is a Lithuanian holiday, um, that’s translated to ‘The Before Lent.’ So, it takes place, um, right before the Lenten season, the weekend right before that, and what it is culturally is, um. It’s a festival in which we scare away the winter pretty much, and welcome the spring. Um, it’s been compared to, like, Mardi Gras and you’ll see as I talk more about it you’ll be able to connect that a little bit more, but um. The entire festival is just Lithuanian people getting together, making really scary masks and decorating them and going really big with these costumes and these like huge masks that they’ll wear, um, to scare away the winter. There is a structure that we construct that is usually a representation of winter, like taking place in like the form of a man or something or like a stick figure, uh, just this really large totem that we burn ultimately to just say ‘To the end with winter, here comes spring.’ And in the same light there is a little staged playing of a man and another man dueling pretty much, and one guy represents winter with the other guy represents the spring, and always the spring will overcome that and win against the winter.”

Background

GD is a 19 year old Lithuanian-American second year student at USC studying Theatre and Classics. Her mother was born in Lithuania and moved to a Lithuanian community in New Jersey, where GD attended Lithuanian school and church. GD describes Užgavėnės as her favorite holiday growing up, attending it not only in America but also in Lithuania. She remembers waking up before dawn in order to peel potatoes in order to make pancakes specifically for the festival. GD believes Užgavėnės to be so important not only to her but also to her culture because it was one of the few pagan holidays that survived Christianization in Lithuania.

Context

GD describes Užgavėnės as one of the more important holidays in the Lithuanian calendar with it originally being celebrated on the last day of winter before Christianization. It has been hastily Christianized and is now celebrated on the weekend immediately preceding Lent, but the traditions and meaning of the festival remain. GD describes Užgavėnės as being full of food like bagels and pancakes, and performers playing music as people dance.

Interviewer Analysis

Many traditional folk festivals and celebrations have been slightly changed in order to fit into the rising wave of Christianity, even Christmas retains many aspects of its original pagan traditions. It is unfortunate however that many of the traditions were lost in these re-skinnings, so it is nice to see that Užgavėnės, according to GD, was able to keep so many of its traditions. Festivals celebrating the end of winter and the coming of a sweeter season are a very common phenomenon especially in northern countries that experience harsher winters like Lithuania.

Shrove Day

Context

Coming from my Jewish background, I had minimal knowledge of Christian holidays besides Christmas. My informant taught me about Shrove Tuesday and the special treat associated with it.

Main Piece

So, Shrove Tuesday — S-H-R-O-V-E Tuesday, otherwise known as Pancake Day, is a religious holiday celebrated in the United Kingdom, mostly by Christians, um, but sometimes Catholics, Lutherans, etcetera etcetera. Um, basically, it’s, it’s before Lent, so it’s, it’s a holiday of self-reflection and, uh, y’know, like Thanksgiving, I guess. But basically, the whole country goes nuts, they make these pancakes, which are more like crepes, with the traditional toppings of lemon and sugar. You would drizzle, uh, lemon juice on top and then dust it with sugar, and then you would wrap it up and eat it. It’s actually really f__king good. But basically at school, every Shrove Tuesday we would get… it was like, an exciting day because you could eat something sweet that didn’t taste like wet cardboard. So that was just a fun thing that we’d all get very excited for… of course, it being school lunch it wasn’t really that yummy, anyway… but that was just a fun thing to look forward to in the school year.

Notes

While I had not heard of Shrove Tuesday, the interesting thing to me about this piece, as with the Guy Fawkes Day entry, was how removed the informant’s celebration of the holiday is from its origin and meaning. My informant does not come from a religious background, but looked forward to Shrove Tuesday solely because of its association with pancakes — the day was even known by the alternate name “Pancake Tuesday.” To him, the holiday had little to do with Christianity. Worldwide, particularly in the United States, Christmas has become secularized and fairly non-denominational. I would be interested to know how many children who grow up participating in festive, secular versions of these holidays end up continuing to practice the religion.

Shrove Tuesday

Main Piece: “Shrove Tuesday is…uh…the last day before Lent. Lent…uh…precedes Easter. Lent lasts about I think a month and during Lent one does not eat as much. So one is more…um…frugal about eating. So the last day before Lent is called Shrove Tuesday and on that day, people eat a lot of pancakes. And the pancakes are tossed in a pan and people like to see how high they can toss them. They usually have lemon on them…squeezed lemon…they’re very nice. And that is the only time of the year that we ate pancakes, just that one day.”

Background: The informant, who grew up in the English countryside, began celebrating Shrove Tuesday as early as he can remember, but stopped around age 16, as the tradition was dying out. He celebrated this holiday at home with family. He notes that eating pancakes was the most enjoyable part of Shrove Tuesday. When asked about the name of the holiday, the informant said “shrove” comes from “shrive” which means to “absolve,” and in terms of this holiday, he thinks it means absolving one’s sins. However, the informant says he and his family did not celebrate Shrove Tuesday in that way.

Performance Context: We spoke over the phone.

My Thoughts: The informant understands Shrove Tuesday as a dying tradition. It seems to have already taken on another form when the informant was celebrating the holiday. As the informant noted, the name “Shrove Tuesday” didn’t accurately describe the holiday he celebrated. Most interesting and special to the informant was the pancake meal, since it was a rare meal to have. As the tradition began to be less celebrated by the informant, the foodways were the only particularly noteworthy component of the holiday. I think of the ways “Shrove Tuesday” in England parallels “Fat Tuesday” in the U.S., where the same notions of celebratory eating are present before the culmination of Lent.

Maslenitsa

“Maslenitsa is basically like a pre-fast to Lent, where you just…you give up meat that week, dairy…so it’s meant to work you off of it. Blini are sweet, so you’re not so depressed, uh…that’s…that’s my take on it. Then you just don’t eat meat or fish or dairy for forty days. Not just Wednesday, Friday–every day.”

Most Christian cultures have their own version of the famous Brazilian Carnival, the blowing off of steam before the fasting that comes with Lent. In Russian Orthodox culture, it is called Maslenitsa. During the week-long holiday, the faithful partake in a pre-fast, as noted by my informant. They give up meat and dairy in preparation for the intense fasting of Lent. In addition, the celebration of Maslenitsa originated in Slavic mythology and was a celebration of the end of winter. Because it still persists to this day, we can see how pagan rituals have been absorbed into Christian holidays. Obviously, this is common across cultures; however, it is especially obvious in this Russian holiday because of the pagan folk elements such as bonfires and the burning of effigies.

Blini, essentially the Russian version of crepes, are the most popular food during this time. They are a traditional Russian dish and are wildly popular; as my informant notes, the fact that blini are everywhere during the week leading up to the Lenten fast makes it easier on everyone.
